Add assessment repo to unicado-package

Summary

Development for assessment tools are shifted from the aircraft-design repo to the assessment repo. Tools like ecological_assessment and cost_estimation are depicted and replaced by the tools in the assessment repo. Following TODOs to make this happen:

• unicado-package: add submodule assessment
• rce-workflow: replace old tools with assessment_manager
• rce-workflow: adaptions due to new folder stucture in assessment repo (tools are not next to eachother but nested)
• assessment: update CmakeLists
• assessment: validate results with eco and cost tool before
• unicado.io: include assessment repo

Acceptance Criteria

• new unicado installer included assessment tools
• workflow is able to run different assessment tools and save the results in the correct folders
